Red White And Blue Potatoes

Tried and true. Delightful. Will have them begging for more.
Ingredients:
12 medium red potatoes
1 teaspoon vegetable oil
1/4 cup crumbled blue cheese
3 ounce package cream cheese softened
2 tablespoons chopped pecans
milk
Directions:
1. Prick potatoes with a form then brush with oil.
2. Place on a microwave safe plate in microwave oven.
3. Cook on high for 3 minutes.
4. Turn potatoes and cook 3 minutes more.
5. When slightly cool halve lengthwise and scoop out pulp leaving thin shell.
6. In a large bowl beat together pulp, cream cheese, 2 tablespoons blue cheese and 1 tablespoon of the pecans until combined.
7. Add milk to make desired consistency.
8. Spoon into shells.
9. Arrange filled shells on microwave safe plate and cook on high 3 minutes.
10. Top with remaining cheese and pecans.
