My version of red velvet cake. This has a pound cake like texture and the frosting is super simple.
Ingredients:
1/2 cup crisco
1 cup butter
3 cups sugar
1 cup milk
5 eggs
1 teaspoon vanilla
3 cups cake flour
1/2 cup cocoa
1/4 teaspoon baking powder
1 pinch salt
1/2 ounce red food coloring
8 ounces cream cheese
1 (1 lb) box confectioners' sugar
Directions:
1. Cream together crisco, butter and sugar.
2. Add eggs one at a time.
3. Add vanilla and red food coloring.
4. Sift together the flour, baking powder, cocoa and salt.
5. Add alternately with milk.
6. Beat until smooth.
7. Bake in tube pan at 325 degrees for 1 hour and 15 minutes.
8. For icing, blend together cream cheese and confectioners sugar.
9. Spread on cooled cake.
