Red Tomato Rice

Sort of like Spanish rice.
Ingredients:
1 1/2 c long grain rice
1/2 c chopped onion
2 tbs olive oil
2 1/2 c water
1 (14.5oz) can diced tomatoes
1 chili powder
3/4 tsp corse salt
1/4 tsp pepper
Directions:
1. Cook rice and onion in olive oil in small saucepan for 5 mins.
2. Add water; bring to boil. Cover and simmer for 15 or until almost tender.
3. Add canned tomatoes and spices.
4. Bring to a gentle simmer, stirring occasionally. Cover and cook 3 to 5 mins or until rice is tender.
