Red Thai Curry Stir-Fry (Pork)

pork & vegetables stir-fryed in red thai curry sauce
Ingredients:
12 oz coconut milk
2 tbsp thai red curry paste
2 carrots, sliced
3 stalks celery, sliced
1 sweet onion, quartered
1 red bell pepper
1 green bell pepper
1 1/2 lb pork
1 oz olive oil
Directions:
1. sautee pork strips in oil till brown on the outside (don't worry about cooking them through).
2. Add vegetables & fry until soft. Add in desired seasonings (2 cloves garlic, sweet basil, salt, pepper, lemongrass, ginger, kaffir lime, etc), coconut and curry paste. Serve over steamed jasmine or basmati rice.
3. Substitute chicken for pork and add 1 or 2 tbsp of crunchy peanut butter and serve with a tablespoon of roasted peanuts if desired.
4. Garnish with chopped green onions
