Red Snapper with Lemon Sauce
Ingredients:
1/2 cup milk
1 egg
14 oz red snapper, fillets
1/4 t pepper
1/4 cup flour, all-purpose
1/2 cup breadcrumbs
3 t butter
2 oz cream cheese
1 oz fontina, shredded
1 t lemon rind
2 t lemon juice
Directions:
1. Whisk together milk and egg
2. Dredge fillets in flour and pepper, then milk/egg mixture and then in breadcrumbs
3. Cook fillets in buttered pan 2-3 minutes per side.
4. Remove fillets and keep warm.
5. In a clean pan, over medium-low heat, combine 2 T butter, pepper, chream cheese, fontins, rind and lemon juice.
6. Pour sauce over fillets and serve.
