Red Raspberry Velvet Pudding Cake |

Raspberries are coming so save some for this recipe! Ingredients:
1 package (12oz size) whole frozen raspberries,thawed (or fresh!) |
1 package (18.25 oz size) devil's food cake mix (plus ingredients to make cake) |
2 cups water |
1 package (6 oz size) raspberry flavored gelatin |
1 tablespoon cornstarch |
2 squares (1 oz size) semi-sweet chocolate for baking |
powdered sugar |
frozen whipped topping, thawed or vanilla ice cream(optional) |
Directions:
1. Preheat oven to 375 degrees F 2. Lightly spray rectangular pan 9 x 13 with oil 3. Spread raspberries evenly over bottom of pan 4. Prepare cake mix as directed. 5. Pour batter over raspberries, spreading evenly 6. In large microwavable bowl, microwave water on HIGH 4 minutes or until boiling. 7. Combine gelatin and cornstarch 8. Whisk gelatin mixture into boiling water until dissolved. 9. Pour gelatin mixture evenly over batter 10. Bake 40 - 45 minutes or until cake tester inserted comes out clean 11. Remove to cooling rack 12. Chop chocolate; sprinkle evenly over cake. 13. Let stand 10 minutes 14. Sprinkle top of cake with powdered sugar 15. To serve, spoon warm cake into dessert bowls. 16. Garnish with whipped topping or ice cream. 17.
