Red Potato Salad

One of my favorite southern dishes.
Ingredients:
7-8 red potatoes
2 tbsp. dijon mustard
2 tbsp. mayo *i use miracle whip
1/2 cup extra virgin olive oil
1/3 cup red wine vinager
1 1/2 tsp salt
pepper to taste
1/2 cup red onion minced
1 green bell pepper, diced
1/4 cup green onion tops, sliced thin
Directions:
1. Cube potatoes, skin or no skin.
2. After water is a rolling boil, put in potatoes, and cook for 12 minutes.
3. Drain.
4. Mix together all other ingrediants to make your dressing.
5. Pour mixture over potatoes, gently tossing them together.
6. Refridgerate til you are ready to serve.
