Red Potato And Sweet Potato Salad

Made for my vegan relatives, this super tasting non mayo potato salad is truly delcious and attractive and taste wonderful warm and even chilled.
Ingredients:
6 med red potatoes
2 med sweet potatoes
1 tsp vegan vegetable bouliion dissolved in 2 tbs water
extra virgin olive oil to moisten
salt, pepper to taste
fresh cilantro to taste
Directions:
1. Cook potatoes by your favorite method.
2. Peel sweet potatoes, do not peel red potatoes
3. While warm, cube for potato salad
4. gently mix in the bouillion into warm potatoes.
5. Drizzle extra virgin olive oil over potatoes to taste
6. Season with salt and pepper
7. Lastly gently stir in a small bunch of fresh chopped cilantro.
8. Dilcious warm or chilled
