Red Pepper Pork Roast with Garlic Butter Sauce (Robert)

Pork medallion just melts in your mouth.
Ingredients:
24 oz lean pork loin
2 tsp extra virgin olive oil
1 tsp crushed red pepper
1/8 tsp season salt (1/4 tsp tony chachere's more spice)
1 tsp oregano
1 tsp tarragon
2 clove garlic
2 tbsp whipped butter
Directions:
1. Rinse and dry pork loin.
2. Butterfly pork.
3. Rub with olive oil and season.
4. Bake uncovered fat side up at 350 degree F for 30 minutes per pound.
5. Add minced garlic and butter in a small sauce pan. Cook for approximately 3-5 minutes.
6. Pour sauce over sliced medallions and serve hot.
