This recipe is from Frito-Lay as they would like you to use Tostitos to scoop the bruschetta. I have not made this so the yield and prep time are guesses.
Ingredients:
3 whole tomatoes, diced
1 small onion, diced
1 cup pecans, crushed
1 bunch basil, minced
4 garlic cloves, minced
1 cup extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon pepper
1 cup fresh roasted red pepper, cut into strips
1 cup aged parmesan cheese
Directions:
1. Mix all ingredients.
2. Scoop with Tostitos or spread on bread.
