Red Pepper Hummus With Pita Chips

Ingredients:
1 can (19oz) progresso chip peas (drained,& rinsed)
1 tbsp. lemon juice
1 tbsp. olive or vegetable oil
2 clove garlic (chopped)
1/3 cupdrained roasted red bell peppers (from a jar)
chopped fresh parsley
pita chips (as desired)
Directions:
1. In food processor, place chick peas, lemon juice, oil,
2. & garlic
3. Cover; prosess 1-2 minutes or until smooth
4. Add roasted peppers; proceess 30-60 seconds or until pepper are
5. finely chopped.
6. Place in serving bowl
7. Sprinkle with parsley
8. Cover & refrigerate until ready to serve
9. Serve with pita chips
10. If a food processor is not available, mash the chip peas
11. with fork. The mixture may be slightly lumpy, but the texture does
12. not interfer with the flavor
