Red Pepper Hummus Rollups

This is more method and idea rather than a recipe. Feel free to experiment. Cook time is chilling time.
Ingredients:
flour tortillas-can use white; whole wheat; high fiber
red pepper hummus-or use the kind that you like
roasted red peppers - from a jar or homemade
kalamata olives
Directions:
1. Spread the tortillas with about 1/4 cup of Hummus.
2. Lay Roasted Red Peppers along the bottom 1/3 of the tortilla.
3. Roll up the tortilla as tightly as you can.
4. Wrap the tortilla in some plastic wrap and place in fridge for at least an hour and up to overnight.
5. Slice the roll on the diagonal into about 1 inch thick slices (2.5 cm)
6. Place on a serving plate and garnish with olives if desired.
