Red Lentils and Spinach

Ingredients:
1 tablespoon oil
3 cloves garlic, minced
1 onion, diced
1 teaspoon paprika
1 teaspoon coriander
1 cup red lentil
1 (14 ounce) can diced tomatoes
2 cups spinach
1 teaspoon ginger, root
4 tablespoons fresh cilantro
Directions:
1. heat oil, add garlic, then onion.
2. add spices (30 sec).
3. add lentils and 2 c water.
4. cook until lentils are soft (10 min).
5. add tomatoes, salt, spinach (10 min).
6. cook until thickened.
7. garnish with ginger and cilantro.
