Red Lentils and Spinach

Ingredients:

  • 1 tbsp oil
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 cup red lentil
  • 1 (14 oz) can diced tomatoes
  • 2 cups spinach
  • 1 tsp ginger , root

Directions:

  1. Heat oil, add garlic, then onion.
  2. Add spices (30 sec).
  3. Add lentils and 2 c water.
  4. Cook until lentils are soft (10 min).
  5. Add tomatoes, salt, spinach (10 min).
  6. Cook until thickened.
  7. Garnish with ginger and cilantro.
