Red Lentil Soup

Ingredients:
1 1/4 cups red lentils
1/2 cup rice
1/3 cup canola oil
1 large onion, chopped
6 cups vegetable stock
1 tablespoon ground cumin
1 tablespoon olive oil
salt & freshly ground black pepper
Directions:
1. Rinse lentils and rice and pick out any grit.
2. In a large saucepan, heat oil; cook onion about 1 minute.
3. Add vegetable stock and bring to a boil.
4. Add lentils and rice; simmer 20 minutes.
5. Add cumin, olive oil, salt and pepper to taste.
