Ingredients:
1 (15 ounce) can red kidney beans, drained
3 tablespoons olive oil
1 medium onion, chopped
1/2 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/2 inch gingerroot, peeled & chopped
4 garlic cloves, chopped
1 teaspoon ground red pepper
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon ground turmeric
1 (15 ounce) can diced tomatoes
2 green chilies, chopped
1 tablespoon fresh cilantro, chopped
3/4 cup water
Directions:
1. Saute onion in oil for 2-3 minutes Add cinnamon & next 3 ingredients & cook for 1 minute Add ground red pepper & next 7 ingredients. Stir & add beans. Boil, reduce heat, & simmer for 20 minutes.
