this salad is great as a meal with little boiled potatoes, serves as a pick-me-up salad after a party, my friends love it for the new years eve parties...
Ingredients:
4 double or eight single matjes filets
4 apples (firm, not sweet
4 small onions
4 hard boiled eggs
4 small red beets
4 large sour cucumbers (pickled cucumbers)
300 grams very lean beef, cooked
1/2 large celery root, cooked
2 cups sour cream
1 to 2 cups plain yoghurt
1 cup heavy cream, whipped lightly (must not be stiff)
some vinegar from pickled cucumbers (without any of the seeds,etc.)
1 tbsp raspberry sirup
some pepper
Directions:
1. cut all ingredients into small cubes - not the cream, of course :-)
2. mix well,
3. then add sour cream,
4. yoghurt
5. vinegar (about 1 to 2 TBSP)
6. then (YES! REally!) add the raspberry sirup.
7. refridgerate for at least 4 hours before serving
8. just before serving, whip lightly heavy cream, stir under salad - makes it 'feel' fluffier, lighter.
9. you may need more liquid, depending on the structure of your apples, red beets, etc.
