Wontons are a street hawker favourite in many asian cultures. There are many variations. Here is one close to a Singaporean style Red Chilli Wonton that is also a favourite of mine!
Ingredients:
wontons
1/2 pound medium ground pork
1/2 pound shrimp, shelled, deveined and chopped
2 water chestnuts, minced
1 clove garlic, chopped
1 stalk green onion, chopped
1 tablespoon oyster sauce
2 teaspoons soy sauce
1 tablespoon chinese rice wine or dry sherry
1 teaspoon granulated sugar
5 drops sesame oil
2 tsp cornstarch or tapioca starch
1/4 tsp salt
freshly ground white pepper, to taste
1 package of wonton wrappers
red chilli sauce
2 little red chillis, seeded and chopped
2 tbs dark soya sauce
4 tbs peanut oil
1 tsp brown sugar
1 tbsp ketsup
1 stalk green onion chopped
3 tbs chopped dried shallots
Directions:
1. Mix pork and shrimp. Add cornstarch.
2. Add water chestnuts. green onion and garlic.
3. Combine the pork mixture with oyster sauce, soy sauce, rice wine or sherry , sugar, sesame oil, salt and white pepper.
4. To fill the wontons, lay one won ton skin in front of you. (Cover the remaining won ton skins with a damp towel to keep them from drying out).
5. Moisten all the edges of the won ton wrapper with water. Place a heaping teaspoon of won ton filling in the center and twist to seal. The final result should resemble a money bag or drawstring purse.
6. Boiling the wontons:
7. Bring a large pot of water to a boil. Add the won tons and let the wontons boil for 5 - 8 minutes, until they rise to the top and the filling is cooked through. Remove from the pot with a slotted spoon.
8. Alternatively you can shallow fry the wontons until until golden brown.
9. Red Chilli Sauce:
10. Small saucepan heat oil.
11. Add chillis and brown slightly.
12. Add brown sugar, dark soya sauce and ketsup. Heat through.
13. Finally add green onion and shallots.
14. Top over cooked wontons and enjoy!
