Red Capsicum, Onion and Basil Compote

Ingredients:
2 tablespoons olive oil
2 onions, peeled and sliced
3 red capsicums, seeded and sliced
1 teaspoon sugar
salt and pepper
2 teaspoons dried basil
Directions:
1. Heat olive oil in frying pan, add onions and saute until soft.
2. Add capsicum and cook gently for 30 minutes, stirring occasionally.
3. Add sugar, salt and pepper and basil.
4. Cook to mix through.
