Red Cabbage - the Only Way to Cook It! |

I was served this by an old friend but never forgot how great it tasted, and have never been able to re-create it until by chance, meeting them again and insisting on having this oh-so-simple recipe for the best cabbage I have ever eaten! Ingredients:
1/2 medium red cabbage (sliced) |
300 ml red wine vinegar |
450 ml water |
2 tablespoons cranberry jelly |
Directions:
1. Place the sliced cabbage in a pan and add the red wine vinegar and water and bring to the boil. 2. Reduce heat after boil and leave to simmer with lid off for 10 minutes. 3. Add the cranberry jelly to the cabbage and simmer for another 20 minutes or until the liquid has reduced to coat the cabbage. 4. Serve (great with my sticky onion marmalade sausages and cheesy mashed potato bake!). |
