A satisfying cabbage snack or side dish from Kitchen Aid Processor cookbook. Could be done manually but certainly is quicker if you have a food processor to slice the cabbage and chop the apple.
Ingredients:
12 oz red cabbage sliced fine. about 1/2 med. head
1 apple, gala, cored and chopped very fine
1/2 cup nonfat yogurt
1/4 cup light mayonnaise
2 tbsp fresh lemon juice
1 1/2 tsp splenda no cal
Directions:
1. Slice the cabbage fine and place in a large mixing bowl.
2. Slice apple into very small pieces. A food processor fitted with a multipurpose blade works quickest, 8 to 10 1 sec. pulses. Add to the cabbage.
3. Mix other ingredients in small bowl and pour over cabbage and apple. Toss to coat.
4. Refrigerate for several hours or overnight before serving.
