Red Cabbage Salad With Poppy Seed Dressing

From a food blog online. Most any salad dressing with poppy seeds definitely gets my attention-this one sure did.
Ingredients:
1 head red cabbage
3 green onions, thinly sliced
1 small carrot, peeled and grated (i added this to pump in more color)
2 -3 slices bacon, crisply cooked, crumbled
cracked black pepper, to taste
1 tablespoon dijon mustard
2 tablespoons poppy seeds
1/4 cup unbleached white sugar (reduced from 1/2 cup)
1/4 cup safflower oil (reduced from 1/2 cup)
1/2 cup apple cider vinegar
1/2 teaspoon salt
Directions:
1. Whisk poppy seed dressing ingredients together in a glass bowl.
2. In large salad bowl, combine salad ingredients with the dressing and mix well.
3. Cover and chill at least 3 hours.
4. Before serving, season with fresh cracked black pepper.
5. Servings are estimated.
