RED CABBAGE CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Steep Estate in Elmo, Texas in 1989.
Ingredients:
6 cups red cabbage shredded
1 tablespoon melted butter
1/2 cup chopped red onion
1 large tart apple
2 tablespoons honey
2 tablespoons cider vinegar
1 teaspoon freshly ground black pepper
1 teaspoon caraway seeds
Directions:
1. Put cabbage into a bowl of cold water for 5 minutes.
2. Heat butter in a deep casserole in microwave for 1 minute.
3. Stir in onion and microwave for 2 minutes.
4. Core apple and cut into 8 sections without peeling.
5. Add apple and cabbage to casserole dish then add vinegar, caraway, honey and pepper.
6. Stir well then cover and microwave 7 minutes stirring twice during cooking time.
