From The Frugal Gourmet, Jeff Smith, an absolutely delicious recipe for a too-often neglected vegetable. People who think they don't like cabbage will like this-and people who DO like cabbage will love this!
Ingredients:
1 head about 3 lbs. red cabbage, cored and shredded
1 1/2 cups beef stock or 1 1/2 cups beef bouillon
1/2 cup brown sugar, firmly packed
1/2 cup cider vinegar
4 tablespoons butter
1/4 teaspoon fresh ground black pepper
Directions:
1. Combine all ingredients in large stainless-steel pot. Bring to a boil, stir, cover, and simmer over low heat, stirring occasionally, for 1 hour and 15 minutes.
