This recipe says it cost $3.00 per serving. I found this recipe in Family Circle magazine. I have not tried this recipe, but I'm posting it for safe keeping.
Ingredients:
1 tablespoon olive oil
1 small onion, finely chopped
1 small green pepper, finely chopped
1 celery rib, thinly sliced
3 garlic cloves, minced
1 1/2 teaspoons mccormick cajun seasoning
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 lb dried red kidney beans, rinsed and picked over
1 large chicken bouillon cube
3 cups water
1/2 lb light kielbasa, cut into 1/4-inch half moons
1/4 teaspoon black pepper
3 cups cooked white rice
Directions:
1. Heat oil in a medium-size skillet over medium-heat. Add onion, green pepper and celery. Cook, stirring, for 7 minutes. Add garlic; cook 1 minute.
2. Scrape contents of skillet into slow cooker. Add cajun seasoning, oregano, thyme, beans, bouillion cube and water. Cook for 3 1/2 hours on high for 5 hours on low or until beans are soft.
3. Stir in kielbasa and black pepper. Cook until heated through. Serve over rice.
