A washday tradition.
Ingredients:
1 lb dried red kidney beans
2 small ham hocks
2 tablespoons olive oil
3 tablespoons garlic, chopped
1 cup yellow onion, chopped
1 cup vidalia onion, chopped
1 cup red onion, chopped
1 cup celery, chopped
1/2 cup parsley, chopped
1 bay leaf
1/2 teaspoon thyme
1 teaspoon sugar
1 (14 1/2 ounce) can tomatoes, chopped
1 lb smoked sausage
1/2 lb ham
1/4 lb andouille sausage
1 quart chicken stock
salt and pepper
Directions:
1. Soak beans overnight; drain.
2. Chop meat; brown in oil.
3. Add vegetables and garlic to meat; brown.
4. Add spices; brown.
5. Add beans and tomatoes and stock.
6. Simmer till thick and beans are soft, 2-4 hours.
7. Serve with rice.
