This soup is an excellent use for left over red beans.My mom used to make red beans with dumplings. I took moms idea and made it into a delightful soup! It blends beautifully old fashioned dumplings with creamy red beans. Read more . This is one of my favorite soups and I am sure it will become a favorite of yours too!
Ingredients:
2 cups cooked red beans(i use left overs from making red beans and rice)
1 large onion, chopped
1 cup chopped celery
4 to 6 slices of bacon
1 cup sliced smoked sausage
1/2 cup diced baked ham
2 to 2 1/2 cups chicken broth
1 cup sliced green onions
1 tablespoon tony's creole spice
3 tablespoons butter
1/2 cup milk
dumplings
2 cups flour
1 tablespoon baking powder
dash salt
1 teaspoon dried parsley flakes
2 tablespoons cold butter
1 cup milk or water
1/2 teaspoon garlic powder
Directions:
1. Dumplings:
2. In medium bowl, combine flour,parsley flakes, garlic powder and salt.
3. Cut in butter, using a pasty blender of fork.
4. Slowly add milk, mixing with flour(do not over mix)
5. Roll out dough on floured surface. Roll dough to 1/8 inch thickness.
6. Cut dough into 2 inch strips
7. In large soup pot, cook onions, celery, and green onions in butter until tender.
8. Add bacon sausage and ham and continue to cook 3 to 4 minutes.
9. Add broth and beans and bring to a boil.
10. Reduce heat to low simmer and cook for 3 to 5 minutes.
11. Drop dumplings a few at a time into simmering broth.
12. Stir to prevent sticking
13. Add Tony's and continue to simmer for 10 to 12 minutes.
14. Serve with fresh hot French bread slices on the side
