Really Green Beans

The vitamin C allows the beans to stay bright green!!! Grilled....try broiled or baked
Ingredients:
1 lb green beans
2 vitamins, c (500 milligram tablets)
kosher salt
1 lemon
1/4 cup olive oil
2 teaspoons garlic, finely chopped
1/4 teaspoon red pepper flakes
Directions:
1. Remove wide strips of yellow zest from lemon with a veggie peeler.
2. Place lemon strips, oil, garlic and red pepper flakes in hot saucepan.
3. Cook over low heat until the oil simmers. Let it simmer 2 minutes. Remove from heat and cool for 30 minutes to 1 hour.
4. Trim stem ends from the green beans. Pile them in a large bowl.
5. Remove lemon zest from the oil.
6. Crush vitamin C tablets to a powder. Add that powder and salt to the oil and mix well.
7. Prepare the grill for direct cooking over medium heat (350-450). Preheat grill pan over direct to medium heat for about 10 minutes.
8. Pour oil mixture over the green beans. Toss til well coated.
9. Using tongs shake off excess oil and spread green beans on the grill pan in a single layer. Grill over direct medium heat with lid closed as much as possible until browned in spots and crisp-tender (5-7 minutes) turning occasionally.
10. Remove from pan and season to taste with salt and freshly squeezed lemon juice.
11. Serve Warm.
