A delicious, filling, nutrient-dense blend of vegetables and low-fat protein to have for lunch after the holiday meals. Delicious use-up for Thanksgiving and Christmas condiments too!
Ingredients:
1 1/2 tbsp sugar-free cranberry sauce
3 tbsp non-fat (preferably organic) prebiotic yogurt (i use liberte brand)
1 tsp lemon juice
1/2 tbsp yellow mustard
1/4 tsp garlic powder
salt and pepper to taste
250g raw beets, coarsely grated
1 tbsp minced shallot
80g raw cauliflower, minced
4 cups baby spinach, washed and dried
Directions:
1. 1 1/2 tbsp sugar-free cranberry sauce
2. 3 tbsp non-fat (preferably organic) prebiotic yogurt (I use Liberte brand)
3. 1 tsp lemon juice
4. 1/2 tbsp yellow mustard
5. 1/4 tsp garlic powder
6. salt and pepper to taste
7. 250g raw beets, coarsely grated
8. 1 tbsp minced shallot
9. 80g raw cauliflower, minced
10. 4 cups baby spinach, washed and dried
