From Eat Smart, Eat Raw. I adore mushrooms and am becomming a soup addict. I've tried this with portabella mushrooms and pine nuts and it works well, too.
Ingredients:
4 ounces shiitake mushrooms
12 ounces chestnut mushrooms
1 red pepper
4 tablespoons fresh parsley
4 tablespoons almond butter
2 teaspoons miso
2 tablespoons flax seed oil
24 fluid ounces water
Directions:
1. Roughly chop the mushrooms and pepper.
2. Put everything in the blender and blend to a smooth puree.
