Ingredients:

  • 1 cup raw pecans
  • 2 cups blueberries
  • 1 -2 tbsp agave
  • 1/2 cup plain yogurt
  • 1 tbsp psyllium
  • 1/2 lemon , juice of, and
  • 1 tsp lemon zest

Directions:

  1. For crust:.
  2. Cut up apricots into small pieces.
  3. Put apricots and pecans in food processor and mix until very well ground and sticky.
  4. Press this mixture into a pie plate only on the bottom.
  5. For filling:.
  6. Mix all ingredients in blender or food processor until smooth.
  7. Pour into crust and chill for 30 minutes.
