Ingredients:
25 ounces frozen cheese ravioli
2 large tomatoes, chopped
1 small onion, chopped
1 garlic clove, minced
8 ounces sliced mushrooms
8 ounces tomato sauce
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup low-fat ricotta cheese (or use fat free)
2 tablespoons reduced fat grated parmesan cheese
Directions:
1. Preheat oven to 325 degrees. Cook and drain ravioli as directed on package.
2. Cook remaining ingredients except cheeses in large skillet over medium-high heat, about 5 minutes, stirring frequently, until tomatoes are soft.
3. Place ravioli in ungreased 8 x8 baking dish. Spread ricotta cheese over ravioli. Pour tomato sauce over top. Sprinkle with Parmesan cheese. Bake, uncovered, for about 20 minutes or until hot.
