Ratatouille Rice

There are no rats in the ratatouille - the answer to my family's question after watching an old Monty Python sketch. We made this with eggplant (not a personal favourite) but think it would be greatly improved by using tart apples instead.
Ingredients:
2 cups brown minute rice, raw
2 cups water
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 small eggplant, peeled, cut into 1/2 inch cubes
1/4 pound fresh mushrooms, sliced
1 large green pepper, chopped
1-15 ounce can tomato sauce
1/2 cup chicken broth
2 teaspoons dried thyme leaves, crushed
Directions:
1. Prepare rice according to package directions.
2. Heat oil in skillet and cook and stir onion and garlic until soft.
3. Add remaining vegetables and cook, stirring constantly, until liquid is evaporated.
4. Add tomato sauce, broth and thyme.
5. Add rice, reduce heat to low, and simmer 10 minutes.
