Ratatouille Filled Crepes

Delicious ratatouille filled crepes.
Ingredients:
crepes
1 c. cold water
1 c. cold milk
4 eggs
1/2 tsp. salt
2 c. flour
2 tbsp. melted butter
filling: 1 onion, thinly sliced
1 medium green pepper, chopped
1 clove garlic, minced
2 tbsp. oil
3 1/2 c. eggplant, cubed
1 small zucchini, sliced
1 16 oz. can tomatoes
1 tbsp. parsley
1 tsp. salt
1 tsp. basil
1/2 tsp. sugar
1/8 tsp. pepper
Directions:
1. Filling:
2. In fry pan cook onion, green pepper, garlic and oil until tender. Add eggplant and zucchini; cook for 5 minutes. Stir in tomatoes, parsley and spices. Simmer uncovererd 15 to 20 minutes until tender.

4. Put all ingredients in a blender. Blend 2 minutes. Refrigerate 2 hours. Make in a non-stick 8 skillet as thin as possible.
