Ingredients:

  • 2 cups zucchini
  • 3 1/2 cups tomatoes
  • 2 1/2 cups bell pepper
  • 2 cups eggplant
  • 2 tbsp olive oil
  • 1 cup shallots
  • 1 tbsp sugar
  • 1 tbsp tarragon
  • 1 tbsp parsley

Directions:

  1. Chop all the veggies in cube size
  2. Cook eggplant & zucchini in 1/2 the olive oil for 5 minutes
  3. Set aside
  4. Heat remaining olive oil and cook shallots & peppers
  5. Add tomatoes and cook for several minutes
  6. Add eggplant & zucchini
  7. Season with salt & pepper, add chopped herbs and bay leaf...simmer for 30-60 minutes
