A Wolfgang Puck recipe that, again, came with my mixer. A yummy blondie recipe that can be made with things that are usually in my pantry.
Ingredients:
1/2 cup butter, room temperature
1/2 cup dark brown sugar, firmly packed
1/2 cup granulated sugar
2 eggs, well beaten
1 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1 cup raspberry preserves
1 cup white chocolate chips
Directions:
1. Preheat oven to 350ºF.
2. Prepare a 9x13 inch baking pan by spraying it with nonstick cooking spray.
3. In the bowl of a stand mixer with the flat beater attached, thoroughly cream together butter and sugars.
4. Add the eggs, one at a time, beating well after each addition.
5. In a separate bowl, sift together flour, salt and baking powder.
6. With the mixer running on LOW, gradually add the flour mixture to the butter mixture.
7. Pour the batter evenly into the prepared pan, spreading out well.
8. Spoon raspberry preserves on top of the batter.
9. Sprinkle the white chocolate chips evenly around the top.
10. Bake for 30-35 minute.
11. Let cool before cutting into bars.
