Raspberry Syllabub (Drink)

From The Pheasant Inn in Cumberland. A traditional English dessert. They are usually made a few hours in advance to let the liquid and cream seperate.
Ingredients:
2 1/2 cups cream
1/2 cup caster sugar (powdered)
10 ounces fresh raspberries
1 tablespoon water
4 egg whites
5 ounces dry white wine
Directions:
1. Whip cream until it is thick.
2. Fold in powdered sugar.
3. Place rasperries and water in a pan and allow to stew over low heat for a few minutes. Turn off and let cool.
4. Whip egg whites 'til stiff peaks form. Fold into cream mixture.
5. Gently fold raspberries and wine into cream mixture and spoon into champagne glasses.( Actually, any glass will do).
6. Decorate with raspberry and leaf.
7. Serve.
