I love raspberries! This smells really wonderful while it is baking.
Ingredients:
1 cup butter, room temperature
1 cup sugar
1 tsp vanilla
4 eggs
3 cups all purpose flour
1/2 tsp salt
1 tsp cream of tartar
1 tsp baking powder
1/2 cup buttermilk
2/3 cup red raspberry jam (i like to use seedless)
Directions:
1. Preheat oven to 350F. Cream butter, sugar and vanilla together. Add eggs, one at a time, beating well after each addition. Mix the dry ingredients and add alternately with the buttermilk. Marble in the raspberry jam. Pour into two greased and floured loaf pans. Bake for 40 to 50 minutes or until done, checking at 40 minutes. Bread should spring back when lightly touched in the center.
