Raspberry Muffins (Whole Wheat)

A healthy whole-wheat muffin recipe. High in fiber and protein. Makes 5 medium muffins.
Ingredients:
1/8 cup soy flour
7/8 cup whole wheat flour
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp artificial vanilla extract
1 1/2 tsp baking powder
1/4 cup egg substitute
1/4 cup milk
1/2 serving (1/4 cup) plain yogurt
1/4 tbsp sugar (note: use 2 tbsp splenda)
1 tbsp margarine, melted
1/2 cup frozen raspberries, unsweetened
Directions:
1. Preheat oven to 350 degrees
2. Mix all wet ingredients thoroughly
3. Gradually add in dry ingredients, stirring in thoroughly
4. Stir in raspberries, then pour batter equally into muffin cups
5. Bake for 25 minutes, then allow to cool
