Ingredients:
2 egs
4 cups biscuit mix
1 cup milk
2/3 cup sugar
1/3 cup water
1/4 cup vegetable oil
3/4 cup smashed fresh raspberries
1/4 cup chopped macadamia nuts
Directions:
1. Preheat oven to 400 degrees
2. Two 12-cup muffin tins, lined with paper liners
3. In a large bowl, mix together eggs, biscuit mix, milk, sugar, water, and oil just until moistened. There may be lumps, which is fine. Gently fold in raspberries and macadamia nuts.
4. Scoop batter evenly into prepared muffin tins. Bake in preheated oven until golden brown, 15 to 18 minutes. Let cool for 10 minutes before removing from tin.
