Raspberry Ice Cream

Ingredients:

  • 2 tbsp water
  • 6 tbsp sugar
  • 1 1/4 cups whipping cream

Directions:

  1. Put berries into pan and add water and sugar.
  2. Cover and simmer 5 minutes until just soft (10 minutes for frozen).
  3. Puree fruit.
  4. Cool and chill.
  5. Churn puree in ice cream machine until thick (10-15 minutes).
  6. Gradually pour in cream.
  7. Don't be tempted to mix together first. It will change the texture.
  8. Continue to churn until firm.
  9. Freeze for firmer texture if desired.
  10. Can also add a swirl of slightly heated raspberry jam before freezing in freezer.
