Refrigerated pudding cups are typically found in your grocer's dairy case. Vary the recipe by substituting sugar-free chocolate or sugar-free caramel pudding cups for the vanilla.
Ingredients:
3/4 cup chocolate wafer crumbs (about 14 cookies; such as nabisco famous chocolate wafers)
1 (22.5-ounce) package refrigerated sugar-free vanilla pudding cups (such as jell-o)
1/2 cup low-sugar red raspberry preserves
1 1/2 cups frozen reduced-calorie whipped topping, thawed
Directions:
1. Spoon 1 tablespoon cookie crumbs into each of 6 (6-ounce) stemmed glasses. Top each with half of a pudding cup and 2 teaspoons raspberry preserves. Repeat procedure once. Spoon 1/4 cup whipped topping onto each parfait. Serve immediately, or chill until ready to serve.
