From the Herald Sun, a simple but decadent addition to pancakes or a fancy cake filling. Goes great with my Fragrant Berries too, just omit the icing sugar as they are already sweetened.
Ingredients:
150 g frozen raspberries, thawed & crushed
2 teaspoons icing sugar, sifted
300 g double heavy cream
Directions:
1. Fold crushed raspberries & icing sugar through cream.
2. Serve with pancakes or pikelets.
