These easy bars are yummy, with a shortbread type crust, sweet jam filling and buttery coconut topping.
Ingredients:
1 cup flour
1 teaspoon baking powder
1/2 cup butter
2 eggs
1 tablespoon milk
1/2 cup raspberry jam
4 tablespoons butter, melted
2/3 cup sugar
2 cups coconut flakes
1 teaspoon vanilla
Directions:
1. Combine flour and baking powder in a bowl.
2. Cut in 1/2 c. butter until the consistancy of cornmeal.
3. Stir in 1 egg and the milk, mix until a soft dough is formed.
4. Spread into an ungreased 8 or 9 square pan, pressing with fingers to get an even layer of dough.
5. Spread raspberry jam over dough evenly.
6. Stir together the remaining egg, melted butter, sugar, coconut and vanilla.
7. Spread on top of jam.
8. Bake at 350 for 30 minutes or until top is lightly browned.
9. Cool, then cut into squares.
10. NOTES : Also good made with other flavors of jam.
