Ingredients:
4 cups thinly sliced napa cabbage (chinese cabbage)
1/4 cup chopped red bell pepper
1/4 cup chopped yellow bell pepper
1/4 cup unsalted cashews, toasted
1/4 cup red wine vinegar
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
Directions:
1. Combine all the ingredients in a large bowl, and toss well. Cover and chill 30 minutes.
