Ranch Potato Salad

I love potato salad every once in awhile and Prevention magazine has said that it is ok to have boiled potatoes if they are cool/cold because that starch has changed properties and doesn't affect the diabetic. Also my family is not keen on mustard and my bf avoids it altogether soooo here is my new potato salad.
Ingredients:
5 lbs small red potatoes.
approx 1 cup to 2 c. ranch,depending on how you like your ranch
6 eggs
1/2 c. sweet onion
1 1/2 c. shredded cheese
Directions:
1. Peel and dice potatoes.
2. Put the eggs and potatoes in water and bring to a boil. Once to a full boil, let boil 10 to 15 min until potatoes are done. (Yes I do boil both together :D, trick I learned from a friend, old southern way)
3. While that is boiling , dice onion in a boil, add ranch, cheese, stir.
4. Drain potatoes and eggs, rinse with cold water.
5. While potatoes are cooling some more, I usually go ahead and peel and dice up the eggs into the ranch mixture
6. Once potatoes are cooled, add them to the ranch mixture and gently fold them in.
7. HAPPY EATING!!!
