Ranch Dressing (Light)

A low-fat alternative to Hidden Valley-type ranch dressings.
Ingredients:
1/2 cup cold water
1 teaspoon cornstarch
1/3 cup low-fat mayonnaise
1/3 cup buttermilk
1/2 teaspoon chopped garlic
1 teaspoon fresh dill
1 teaspoon fresh parsley
1/2 teaspoon salt
1/2 teaspoon vinegar
fresh ground pepper
Directions:
1. In small saucepan, combine water and cornstarch.
2. Mix well.
3. Bring mixture to a boil over high heat, stirring constantly.
4. Simmer 1 minute, remove from heat and cool.
5. In small jar, combine all ingredients except pepper.
6. Place tightly fitting lid on jar and shake well.
7. Add pepper to taste.
