This is a little bit of a story to this recipe.... While visiting in laws (ex now...LOL) at their 1800 field stone farm house which was their weekend getaway place I discovered this recipe in 2001 Canadian Living. Read more . I was struck by all the great ingredients and it was everything we loved so we made it that weekend. It was such a huge hit that every time we got together at the farm some one would ask for the Ralley special salad....and so we started calling it the Farm House Special It can be doubled or tripled and we always ate it in the orchard under the apple trees. It is so good and makes a great luncheon!! We piled it on a huge platter and just carried napkins, forks and lemonade!! *Not my pic but this looks so close to how it looks made
Ingredients:
3 tbsp olive oil
2 boneless skinless chicken breasts...we always picked a deli roasted chicken or 2 and used that as it made it so easy
1 tsp chili powder
1/4 tsp each salt and pepper
1/4 c chopped fresh cilantro
2 tbsp lime juice or cider vinegar
1/4 tsp each sugar and hot pepper sauce
1 clove garlic, minced
2 tbsp mayonnaise
2 c cooked corn kernels
1 avocado , peeled and cubed
1 sweet red pepper sliced
1 sm red onion sliced
1 head boston lettuce, separated
4 hard-cooked eggs, quartered
2 tomatoes cut into wedges
Directions:
1. If you're cooking your own chicken brush it with 2 tsp of the oil and sprinkle with the chili powder and a pinch of salt/pepper. Grill over medium high heat about 8 mins until no longer pink.Slice.
2. If using a deli roasted chicken just cut up into slices and set aside.
3. Mix the dressing:
4. I always double or triple this part even if I don't double or triple the salad as it is so good and I like lots of dressing...you choose!!
5. Whisk together the cilantro, lime juice,sugar,hot pepper sauce, garlic and remaining oil, salt and pepper.Remove 2 tsps and mix with mayonnaise.
6. Toss the corn , avocado, red pepper and onion with remaining dressing.

8. This was our idea and we still serve it wthis way...makes quite a presentation!!
9. Arrange all the clean torn lettuce on the platter.
10. Mound the corn and avocado mixture on platter. Arrange sliced chicken around and over the corn mixture.Surround with eggs and tomatoes. Drizzle the mayo mixture over top.
11. We served it with crusty rolls and yes, some weekends not just lemonade we had wine!!
