Rako's Potato Leek Soup

Great warm or chilled. A pressure cooker & immersion blender makes this super simply & fast.
Ingredients:
20 g butter
8 cups water
2 vegetable bouillon cubes
600 g red potatoes, sliced thin
200 g leeks, sliced thin
Directions:
1. Slice potatoes and leeks.
2. Add the potatoes to the pressure cooker, with the bouillon and water. process on high for 10 minutes.
3. Saute the leeks in the butter.
4. Add the leeks to the pressure cooker.
5. Use the immersion blender.
6. Optional: top with garlic croutons & minced chives or scallions.
