Raita is an Indian salad, refreshing and low in calories. Two or three spoonfuls make an ample serving. I found this recipe in the Beltane Papers magazine.
Ingredients:
1 1/2 cups plain yogurt
1 cup finely chopped raw vegetables (can be radishes, cucumber, green pepper, green onions, tomatoes or beets)
2 teaspoons finely-minced fresh ginger
1 dash cayenne
1 dash curry powder
Directions:
1. Stir vegetables into yogurt and vegetables.
2. Season with a dash of cayenne and curry powder.
